Nitrite is not harmful to health, as long as it meets the limits defined by DIPOA (Animal Origin Products Department of Inspection) of the Ministry of Agriculture, Livestock and Supply of Brazil. - The use of nitrite in the jerked beef production is also approved in the U.S. by the FDA – Food and Drug Administration. ⠀ Charque - Charque is made of Beef and salt. - Salting and exposure to the sun are intense, the beef blankets are covered in salt and exposed to the sun for days. This process is responsible for changes in meat characteristics, including changes in colour and flavour. ⠀ ⠀ Desalting ⠀ Brazilian Jerked Beef needs to be desalted before consumption. 1 - Remove the product from the packaging and place it in a bowl with water (2 litres of water for every 500g of the product). 2 - Change the water every 2-hour - repeat it 6 times. 3 - After the desalting process, the product is ready to be used in your favourite recipe. ⠀ This product should not be consumed without desalting. ⠀ FRONT - A relatively lean meat that must be cooked. Ideal for stews, mincemeat, roasts, stews, pot meats, stuffed meats, or prepared with a sauce.
