Two things:
1. How do i know it’s not food dye making it green?
2. I’ve been making matcha out of other teas…. It’s pretty great…. Why don’t other people do this?
For those that don’t know black tea is just bruised green tea leaves, what I’m asking is why don’t the Japanese grind anything other than fresh unbruised green tea leaves… why don’t they grind Genmaicha, black tea etc etc etc they have so many products coming from 1 plant why only grind 1 of them?

It’s probably not even matcha but powered sencha, much cheaper product sold because there aren’t labelling laws outside Japan on matcha. Buy direct from Japan to ensure you get real matcha.

Meh. The word "ceremonial" should be enough to denote that matcha did/does have a cultural purpose beyond making green lattes. Not unless you were gonna host actual Japanese tea ceremony, why spend the extra just to dilute it in milk ☹️

You can use dairy milk, just make sure it’s fucking fresh dairy milk. Like under three days old otherwise it’s not good.

Ceremonial grade isn’t a real thing. It’s a marketing term made up by westerners, it does not exist in Japan.

This is why I thought I hated matcha when I first tried it at Starbucks. Makes so much sense. It tasted super fishy. Now my husband and I pretty much drink the good stuff daily.

Dairy for Matcha late? Buaahh, a no go! I always use almond Milk and also make Matcha Tea with warm water and then add the almond milk to it. Never use just Milk and Matcha only it doesn‘t taste as good by itself.

The only matcha I can find here is a 100g bag for 7 bucks. Barely green, almost brown, but tastes fine. I whisk it with a frappe hand mixer with hot water not boiling and add honey and soy milk. I can’t describe the taste but it’s tasty. The end product is a pale green drink. The box says it’s imported from Japan so whatever

I think this has more to do with oxidation of chlorophyll than poor quality. There are probably preservatives or dye in the matcha that keep it a "fresh" green.
